Hi.

I’m Brittany! I can be found hitting the trail with my two favorite girls (Kona and Mako, my Springers), and having movie night with my husband. I go to sleep ridiculously early, and I love to cook. Traveling and sunshine make me one happy lady!

 Tahini Brownies

Tahini Brownies

I love brownies. I love the aromatic scent that envelopes your house when you are baking them. I love the crunch of the edges and the melting of the middle. And I love that this version doesn’t make you feel like a crudmuffin after you eat them! These are so easy to make, take minimal ingredients and turn out every time you make them!

Ingredients:

  • 1/2 cup tahini ( I find mine at Trader Joe’s)

  • 1 egg

  • 1 tsp vanilla

  • 1/4 cup coconut sugar ( Maple sugar would be a great alternative)

  • 1/4 cup unsweetened cocoa powder

  • 1/2 ultra fine almond flour

  • 1 tsp baking soda

  • 1/4 tsp sea salt

  • 1/4 cup dark chocolate baking chips ( HU and Enjoy Life are ones I have on hand)

Instructions:

  1. Preheat oven to 350 degrees Fahrenheit.

  2. In a medium bowl whisk together tahini, egg, vanilla, and coconut sugar.

  3. Once well combined, add in the dry ingredients: unsweetened cocoa powder, almond flour, baking soda, and sea salt.

  4. Once combined, mix in chocolate chips.

  5. Line a 8x8 baking pan with parchment paper and lightly dust with nonstick spray.

  6. Press brownie mix into the pan. The mix will be thick and fudgy, so it may be slightly hard to spread out (it is worth the extra work, I promise).

  7. Bake uncovered for 15 minutes.

  8. Remove from oven and let cool completely before lifting the brownies from the pan.

  9. Slice and enjoy!
