Broccoli Salad
I have to admit to you all, I always used to avoid this particular salad at picnics. I mean, with all the other tasty bowls, why would I waste my precious plate space with broccoli and weird cubes of cheese? I had flashbacks of that scene in Daddy Daycare when some one is dressed up as broccoli to try and entice kids into eating Veggie Os with the cheer of “B-R-O-C-C-O-L-I. I am the broccoli and don’t know why”. Well, now I do know why! Take away that cubed cheese, and lighten the recipe up with some homemade mayo and cleaner ingredients, and it is a really tasty dish!
Ingredients:
2 large florets of Broccoli
6 pieces of thick cut bacon
1/2 red onion, diced
1/2 cup sunflower seeds
1/4 cup craisins
1 cup mayo (see my mayo recipe for what I used)
2 tbsp honey
1 tbsp apple cider vinegar
1/2 tsp salt
1/2 tsp pepper
Instructions:
Cut and trim broccoli into bite size chunks
Whisk mayo, honey, apple cider vinegar, salt and pepper together until well combined.
in a skillet, on medium heat, cook 6 slices of bacon until crispy.
Pat with a paper towel and let cool. Slice into bite size pieces.
In a medium size bowl, add broccoli, sunflower seeds, bacon, red onion, and craisins and mix to combine. Add in the mayo mix and combine all until covered.
Place in the fridge to chill.
Remove when ready to serve.
