Fiesta Salad
“Whatever that is, it smells freaking good!” I would like to say that this came after HOURS laboring over the most magnificently difficult recipe that even Julia Childs couldn’t accomplish, but as I type it, I think this is even better. This recipe is so dang simple, and if you you have a garden, you might have most of this in your yard. If there is something in this ingredient list that you don’t agree with, just omit it! That is the beauty of this recipe my friends, completely customize-able. I love avocados and tomatoes in mine, hubby doesn’t . Viola- two different salads perfectly suited for each of us!
Ingredients:
4 corn kernels
2 avocados
1/2 red onion
1 pint cherry tomatoes, sliced lengthwise
1/2 bunch cilantro finely chopped
2 limes, juiced
1 tbsp avocado oil
1 tsp salt
1/2 tsp black pepper
Instructions:
Boil or grill corn until cooked.
In a medium bowl, add diced avocado, sliced tomatoes, diced red onion, and corn cut off the cob.
Mix in chopped cilantro.
Stir.
Pour in lime juice, avocado oil, salt, and pepper.
Mix and add additional spices to taste.
