Grilled Nectarine Chicken Salad
This has to be the epitome of a backyard summer salad. The buttery spinach leaves paired with the sweetness of the sliced strawberries and the slightly charred chicken breasts, it is so dang good. Side note: grilled nectarines are amazing. If possible, the grilling brings out more of the sugary sweetness of the fruit. The dressing is a beautiful pink peony color with a little zest. If I could digest dairy, I would pair this with feta or a goat cheese. I imagine myself on a summer deck chair on a sunny back deck with twinkle lights strewn from tree to tree, the perfect pairing to a delicious summer salad.
Ingredients
For Salad-
3 chicken breasts, halved
1 cup strawberries, sliced
2 nectarines, sliced
2 cups baby spinach leaves
1/4 cup sliced almonds
salt and pepper to taste
For Dressing-
1 cup strawberries
2 tbsp honey
5 tbsp apple cider vinegar
1/3 cup avocado oil
Instructions
Set your grill to a medium low heat. Let warm up to temp.
Add salt and pepper to taste on both sides of chicken breast.
to one half of the grill, add slices of nectarine, and to the other, chicken breasts.
While chicken and nectarines are grilling, assemble salads.
In a blender, add strawberries, honey, apple cider vinegar and oil. Blend until fully incorporated. Set aside.
In about 10 minutes, flip the chicken and nectarine slices. About 10 minutes after that, or when chicken is fully cooked, remove from grill.
Let sit for about 5 minutes.
Add sliced chicken and nectarines to your spinach salad. It should have a bed of spinach, sliced chicken, sliced strawberries, sliced nectarines, sliced almonds, and strawberry dressing.
