Maple Sage Breakfast Casserole

Ingredients:

  • 1 pound bulk breakfast sausage, maple

  • 2 tbsp arrowroot powder

  • 1 can coconut milk

  • 1 pound, shredded hash browns

  • 1 bunch green onions

  • 6 eggs

  • 1 tbsp rubbed sage

  • 1 tbsp minced garlic

  • 1 tsp onion powder

  • 1 medium yellow onion

  • 1 tsp salt & pepper

Instructions:

  1. Preheat oven to 350 degrees. Spray a 8x8 baking dish.

  2. In a pan, brown maple sausage and diced yellow onion. When the meat is browned, add arrowroot powder. Mix until well incorporated.

  3. Add in the can of coconut milk. cook until mixture thickens and comes to a boil, stirring for about 3 to 5 minutes. Add in salt and pepper to taste.

  4. In a medium bowl, whisk 6 six eggs, garlic, spices and 1/3 of the diced green onions.

  5. Add hash browns to the baking dish. Sprinkle remaining green onions. Layer the sausage mixture over the hash browns. Next pour the egg mixture on top of the sausage mixture.

  6. Place baking dish, uncovered, in oven. Bake for 45-50 minutes.

  7. When the timer goes off, the casserole will still look “wet” because of the creamy sauce. As long as the casserole is firm, the dish is baked.
