Oat Chip Lace Cookies
I recently discovered coconut sweetened condensed milk and it is a game changer. This means I could finally make dairy free fudge, which I did! I had this box of cookies given to me as a secret santa gift, and they were so dang good! I savored them for weeks. I hid them at my desk.. from myself so I could continue enjoying them. When they were gone I had a grieving period.
That’s when I started playing around with a recipe of my own. Let’s just say it was harder than it looked. The texture is finally right and the flavor profile is finally there!

Ingredients:
2 cups oat flour
1/2 tsp baking soda
1/2 cup coconut sugar
1/4 tsp sea salt
1 can sweetened condensed milk, coconut
1/3 cup dairy free dark chocolate chips
Instructions:
Preheat oven to 375 degrees.
Line a baking sheet with parchment paper.
In a medium mixing bowl, add flour, sugar, baking soda and salt. Mix until well incorporated.
Add in sweetened condensed milk, this could be a bit tough to mix in depending on temperature it was being stored..
After mixed, add in chocolate chips.
Using a cookie scoop, place cookie balls on baking sheet.
These cookies flatten out almost completely so plan according when placing them on the baking sheet.
Bake for 13-15 minutes.
Remove from oven and let cool. When able to handle, add to wire rack. This helps the cookies get their crunch factor.
