Oat Chip Lace Cookies

I recently discovered coconut sweetened condensed milk and it is a game changer. This means I could finally make dairy free fudge, which I did! I had this box of cookies given to me as a secret santa gift, and they were so dang good! I savored them for weeks. I hid them at my desk.. from myself so I could continue enjoying them. When they were gone I had a grieving period.

That’s when I started playing around with a recipe of my own. Let’s just say it was harder than it looked. The texture is finally right and the flavor profile is finally there!

Ingredients:

  • 2 cups oat flour

  • 1/2 tsp baking soda

  • 1/2 cup coconut sugar

  • 1/4 tsp sea salt

  • 1 can sweetened condensed milk, coconut

  • 1/3 cup dairy free dark chocolate chips

Instructions:

  1. Preheat oven to 375 degrees.

  2. Line a baking sheet with parchment paper.

  3. In a medium mixing bowl, add flour, sugar, baking soda and salt. Mix until well incorporated.

  4. Add in sweetened condensed milk, this could be a bit tough to mix in depending on temperature it was being stored..

  5. After mixed, add in chocolate chips.

  6. Using a cookie scoop, place cookie balls on baking sheet.

  7. These cookies flatten out almost completely so plan according when placing them on the baking sheet.

  8. Bake for 13-15 minutes.

  9. Remove from oven and let cool. When able to handle, add to wire rack. This helps the cookies get their crunch factor.
